- Elderberries are a rich source of vitamins A, C, and calcium, folate, potassium, and iron. They also contain the antioxidant flavonols of quercetin, kaempferol, isorhamnetin and anthocyanins. They can be used to make tea or you can use them in a recipe to make Elderberry syrup. Note: Raw berries can cause nausea, vomiting, and diarrhea, among other symptoms, so be sure to cook them before eating.
